Every year we set out to be healthy, to eat healthier and it can be quite difficult especially for those who are embarking on something they’ve never done before. There’s nothing worse than starting something new and finding yourself stuck or ready to quit without exploring all the possibilities. I’m going to show you some of my finds and yes, they do happen to be incredibly reasonable in price and good. If priced out, these meals are definitely cheaper than most fast food options and its ultimately better for your body.
Plus, Trader Joes is a vegan paradise if you don’t know already. You’ll find so many great items to begin your journey in the tastiest way possible and for some of us who thoroughly enjoy food this is going to be the best bet in order to keep you committed. Here are my picks…
Vegetable Pad Thai
Thai food is one of my favorites on any given day so finding this vegan option was awesome. It tastes amazing and gets you full. Pad Thai typically costs around $8-10 for a meal in the KC Metro area, so at a little over $3.00 per package you’re looking at a good portion and better price. This was good, for real!
Vegetable Panang Curry
3 words, Oh. My. Goodness!!! This is Ah-May-Zing!! Curry fan? Shoot for this, its a definite score. My mouth is still watering. It was sooo good! Plus it’s the perfect portion and still filling. One of my favorite Vegan finds from Trader Joes.
Bean and Corn Enchiladas
They come two to a package and I was able to do one enchilada per meal during the week by adding additional items to it. I added Mexican rice, sweet peppers, cut up an avocado and went to town. So good! Now, I’m not sure if it was 100% vegan, but it didn’t have cheese and the ingredients looked legit.
Mandarin Orange Chicken-Less Morsels
This one shocked me! I didn’t quite know what to expect, but this Orange Chickenless Chicken was EVERYTHING I needed it to be. We placed it over a bed of jasmine rice and added veggies as a side. It was super yummy and left me craving more. Plus, unlike the other items, this portion is for more than one person. The kiddo never suspected anything and ate all of it. I won’t tell him either, because its going to be on our dinner table often.
Chicken – Less Chicken and Meatless Meatballs
The next two are for the family as well. Chicken-less chicken can be added to any dish and the meatless meatballs that are great on a bed of pasta with organic spaghetti sauce with sliced mushrooms, peppers and onions. (just a suggestion).
It’s delicious! Made of potatoes, green beans and other veggies. It’s something you can actually make yourself but if you are looking for a quicker option, its perfectly seasoned and of course its easy to prepare. Make a meal out of it by laying it over some brown rice or quinoa and enjoy! It can also be added as a side to any dish. (Sorry I didn’t get a pic).
Have a sweet tooth?
Dried Baby Bananas
Here are two of the ones I purchased. Trader Joe’s dried bananas, which aren’t like dried chips by the way. They are literally bananas that have been dried and shrunken down into mini shriveled bananas. I admit, I wasn’t sold on them at first but the more I ate them the more I really liked them.
Freeze Dried Mango
But my absolute fav are these super yummy freeze dried mangos. They come in other flavors as well, but the mango is one that you do not want to pass up on.
The peanut butter is a must have for any vegan menu because its a great source of protein. I do understand that not everyone is a peanut butter fan, but I particularly love to slice up apples and dip them in peanut butter with a few raisins sprinkled on top. this is my favorite breakfast and snack. Simple ingredients no fillers or mystery ingredients in this.
Roasted Seaweed Snack
I love seaweed. Its full of nutrients, taste like sushi AND its only 99 cents at Trader Joes. I usually miss sushi so this keeps my cravings at bay and makes me a happy girl. This one is Wasabi Flavored.
