I was first introduced to protein balls after visiting a local juicery that just opened in Westport (Missouri) called Ruby Jean’s Juicery and I immediately fell in love with the juice, the ambiance and the protein balls. I sat in my car and devoured one on my way to work that morning. I’ve since gone back several times to try another one of their drinks and of course to have a protein ball. 🙂
I knew from the moment I tried it that I had to make this a part of my healthy living routine. Not only was it tasty but it was the perfect source of energy and protein to get my day off to the right start. So I began my hunt for the perfect recipe and ran across one from LittleBitsOf.com on Pinterest. I whipped together a batch and I loved the outcome. The recipe makes approximately 8 1/2 inch balls. However, I would recommend doubling the batch if you are looking to increase the size of these or have more during the week.
The original recipe:
- 1/3 cup PB2
- 3 tablespoons water
- 2 tablespoons agave (or honey)
- 1/2 cup of oats
- 1/2 cup of crisped rice
- 2 tablespoons flaxseed meal
- one scoop vanilla protein powder
- 24 chocolate chips
- In a small bowl mix together PB2, 3 tablespoons of water, and agave. Stir until combined. You can either add the dry ingredients to the same bowl and mix together or in a medium bowl, mix together all dry ingredients and combine. Add the chocolate chips last. Then divide dough into small portions and roll into balls.
In addition to the ingredients listed above I added coconut and raisins to my batch of balls and they are very delightful. If you are looking for something that is healthy and has a hint of sweetness, make sure you try these. They are easy to whip up and can be eaten for breakfast or as a snack.
